The Brewing Process
Sparkling wines undergo two fermentations. The first is to make grape juices into still wine without any bubbles. Another fermentation follows to convert the base wine into bubbling wine by adding yeast and sugar.

Rosé
Rosé is pink-colored sparkling wine. It is often more powerful in flavor than your regular sparkling wines, thanks to the punch packed by the still red wine. Winemakers generally blend 15 percent of still red wine into the final sparkling rosé wine production. Rosés have a red fruit aroma, such as strawberries or raspberries. Generally, they are great as an afternoon drink, can be paired with heavier meat dishes, or even be a light, after-dinner dessert drink.

Brut
Brut is the French word for dry. As such, brut sparkling wine refers to a dry sparkling wine. When winemakers make brut wine, very little sugar is added to the bottle in the second fermentation. This will make brut dry and sharp to the palate and emanate aromas of nuts, brioche, and flowers backed by fruit-forward notes of apple and pear. Brut is the drink of choice for a New Year's party or really any celebration for that matter. This makes it a solid sparkling wine when looking for a gift to buy.
Cava
Cava is a sparkling wine from Spain and is made using the same methods to create Champagne. Cava is suitable for any occasion, whether it be a welcome drink at a party, celebrating Christmas or the New Year, or serving it with the dessert portion of the meal. Cava is generally less acidic than Champagne and has a complex flavor. Depending on its age, Cava may have notes of citrus and other Mediterranean fruits.
