Dom Pérignon is a legendary figure often credited as the inventor of the Champagne-making process, although historical evidence is limited. According to the legend, Dom Pérignon was a monk who made significant contributions to the cultivation of grapes and the winemaking techniques in the Champagne region. However, during the French Revolution, a fire destroyed many valuable documents in the abbey where he worked, leaving behind only two insignificant letters and some signed contracts. These remaining artifacts are not sufficient to establish his identity as the true father of Champagne.Nevertheless, Dom Pérignon's contributions to grape cultivation and winemaking techniques in the Champagne region were substantial. He is still revered as a founding figure in the development of Champagne. Dom Pérignon Champagne primarily utilizes grapes from nine vineyards: Chardonnay from the premier cru vineyards of Chouilly, Cramant, Avize, and Le Mesnil-sur-Oger in the Côte des Blancs region, and Pinot Noir from the premier cru vineyards of Hautvillers, Bouzy, Aÿ, Verzenay, and Mailly-Champagne.
