Crystallum is located in Hemel-En-Aarde, in the Walker Bay region on the southern coast of Cape Town. It is a small family estate known for its cool climate. Even during the hot summer months, the temperatures typically range between 23 to 25 degrees Celsius, making it one of the coolest and most exceptional wine regions in Cape Town. The estate was founded in 2007 by the two brothers Andrew and Peter-Allan, with Andrew responsible for vineyard management and Peter-Allan serving as the winemaker.

Crystallum is committed to showcasing the terroir characteristics of Hemel-En-Aarde. They insist on using only native yeasts for fermentation, allowing the grapes to directly reflect the true flavors of the land. The two brothers employ high-density planting, inspired by Burgundy, which forces the grapes to search for water and nutrients, resulting in deep-rooted vines. They also strictly limit yields to achieve the highest quality grapes with concentrated flavors. The grapes undergo gentle maceration and slow fermentation in stainless steel tanks, allowing the enticing aromas to develop. After fermentation is complete, the wine is aged in 16-month-old French oak barrels. The winemaking process involves minimal intervention, without predefining a specific winery style. Instead, they let the grapes speak for themselves. With an annual production of only 30,000 bottles, Crystallum has impressed wine critic Neal Martin, who publicly expressed that Crystallum can rival the esteemed DRC (Domaine de la Romanée-Conti) in terms of its impressive quality.
