Description
Sui-gyoku is a Junmai Ginjo sake from the Ryozeki Shuzo brewery in Akita Prefecture. Its development was guided by a key collaboration with the renowned Takagi Shuzo.

Known for producing the highly acclaimed sake Juyondai, Takagi Shuzo lent their core brewing methods and also advised on the product's name and label design. As a result, Sui-gyoku is regarded by enthusiasts as "the accessible Juyondai."

Brewing Method
The distinct character of Sui-gyoku is shaped by two fundamental brewing principles:

Low-Temperature, Long-Term Fermentation:
A signature technique of Takagi Shuzo. This slow, deliberate fermentation process in a chilled environment allows for the development of elegant and complex fruit aromas.

Rice Polishing Ratio of 50%:
This process removes the outer layers of the rice grain, which can cause undesirable flavors. It creates a fine balance on the palate, allowing fresh fruit notes to come forward while retaining a subtle, elegant umami from the rice core. The two elements are well-integrated.

Tasting Notes
Nose:
Initial aromas of fresh pear and melon, followed by notes of apple, white peach, and white flowers. The aromatic profile is clear and layered.

Palate:
A smooth texture on the palate with a delicate, natural sweetness. The mid-palate introduces a gentle core of rice umami, which provides structure and depth.

Finish:
The finish is clean and crisp, leaving a pure and transparent impression. It shows good balance between acidity and sweetness.

Serving Suggestion
Recommended to be served chilled at 10-15°C (50-59°F). This temperature range best expresses its full aromatic profile.
