大山夢工房位於日本著名梅產地——九州大分縣大山町，而大山町則有著日本最傳統的梅樹品種——鶯宿梅。鶯宿梅果大肉厚，而且帶有獨特香氣，於是大山夢工房便運用了產地的先天優勢，使用僅由委託當地農戶種植出產的優質鶯宿梅醸製天然梅酒（不添加任何人造物），以致旗下所有酒品味道均醇厚天然。全日空ANA商務艙指定梅酒大山夢工房夢響五年熟成梅酒醸造過程費時近十年，酒品先經過5年時間熟成，再放入曾儲藏威士忌的白橡木桶進行2次熟成（3年或以上），以致酒品口感飽滿，並帶有濃郁橡木桶香氣，為品嚐梅酒的高層次享受。
