Kanaan’s Crazy Fang is the winery’s top red and is assembled from 100% Cabernet Sauvignon. The 2016 Crazy Fang has a very deep garnet appearance and an immediately evocative nose of evolving tertiary leather and mushroom still in a youthful guise of ripe dark fruit (slightly mellowing cassis, blackberry and mulberry) with some slight herbaceous character (sage, mint) and toasted new oak notes. On the palate, this is super full-bodied with coating, chewy and angular tannins, some sprightly acidity and well-integrated high alcohol. The large structure is nicely fleshed out with some evolving dark fruit complemented by savory new oak and some slight tertiary development. With its long length, although this is undeniably approachable and already evolving, the 2016 Crazy Fang is built to last and will continue to improve in bottle over the next 6-8 years.
