In pursuit of clean air and abundant water sources, Naohiko Noguchi chose Komatsu City, Ishikawa Prefecture, a village at the foot of Mount Hakusan to build an ideal sake brewery, and used underground water from the peaks of Hakusan Mountain as the "Shigomizu water" for brewing. ”.
