Sake brewing began in the late Taisho years, and the brand name: Nabeshima was born in 1999. The name "Nabeshima" originated from the Nabeshima clan, the lord of the Saga Domain in the Edo period. The brewery has an annual output of 450 koku, and the president, Mr. Iimori, also serves as a brewer. The brewing style uses rice produced in Saga Prefecture. The highest-standard Ginjo sake uses Yamada Nishiki or Aishan from Hyogo Prefecture. The rice is steamed in a wooden steamer. The sake brewing system mainly uses a medium-temperature and quick-brewing system. After 20 Heisei, The raw wine system was started, and most of the wines produced were fresh and elegant, with a slight carbonated taste. Due to its high-quality sake, Tomihisa Chiyo has become a popular sake brewery in Kyushu in recent years and has won the gold medal at the "National New Sake Appraisal" for seven consecutive years; among them, "Nabeshima Daiginjo" also won the "National New Sake Appraisal" in 2011 "Meeting" Gold Award and "International Wine Challenge" Overall Champion Wine!
