Takagi Shuzo was originally a public house in Kyoto (the collective name for senior officials and nobles of the imperial court). However, after being defeated in the Onin Rebellion, he fled to Takagi Mountain (today's Yamagata and Akita Prefecture area) and changed his surname to Takagi. Since then, nearly 3,500 square meters of land have been reclaimed for brewing, and Takagi Shuzo was founded in 1615. Before the 14th generation series came out, Takagi Shuzo was already famous for its "Asahi Hawk" series. The Japanese pronunciation of Asahi Eagle is "あさひたか". The pronunciation of "Eagle" is the same as Takagi's "高 (たか)". The family crest of the Takagi family is a white circle with two overlapping feathers, which is an eagle. The Takagi family uses the eagle as its symbol, and designed a logo similar to the family crest for the Asahi Eagle wine to represent the glory of being a member of the Takagi family.

The 14th generation series was developed by Takagi Tatsugoro, the 14th generation descendant. When Mr. Tatsugoro took over, it was during Japan's economic bubble period, which also affected Takagi Shuzo's operations. After the then Toshi (the brewmaster) retired, Takagi Shuzo could not afford to hire a new Toshi. Faced with the dilemma of no one to coordinate, Mr. Tatsugoro decided to specialize in brewing technology. Different from the spicy taste of ordinary sake, Daiginjo sake stood out with its unique fruity aroma and refreshing taste. He led the brewery to break through the encirclement and thought about it. Please use "Fourteenth Generation" as its series trademark. In addition, Mr. Takagi is also very special in the selection of sake rice. In addition to Yamada Nishiki, he also developed a variety of unique rice varieties such as Ryūraku no Son, Sake Mirai, and Yushu Yu, as well as his own yeast to create an unduplicated product. Unique Taste Today, Takagi Shuzo has been successfully succeeded by the 15th generation successor, Kenito Takagi. After graduation, he first cultivated his commercial sales ability at Isetan. He returned to the brewery at the age of 25 and led with what he learned. Takagi Shuzo has embarked on a marketing path that is different from other sakes. In recent years, they have collaborated with Japanese sports celebrity Hidetoshi Nakata to launch "N" junmai daiginjo, which is bound to set off another wave of panic buying.
