The Cattier family has owned vineyards in the Champagne region since 1763. Jean-Jacques Cattier and his son Alexandre Cattier serve as the cellar masters, leading a team of eight highly skilled artisans to create the Black Ace of Spades Champagne range using almost entirely handcrafted methods.The grapes used in the production of Black Ace of Spades Champagne come from Grand Cru and Premier Cru villages in the Champagne region. Traditional pressing methods are employed, and only the finest "cuvée" juice, the first pressing, is used. The wine undergoes secondary fermentation in the bottle and lees aging in one of the deepest underground cellars in the Champagne region. The process includes hand riddling, a meticulous technique of gradually turning the bottles to collect the sediment in the neck of the bottle for removal.One distinctive aspect of Black Ace of Spades Champagne is the use of a handcrafted dosage, a blend of reserve wines aged in oak barrels for nine months to a year after disgorgement. This method of dosage blending is quite rare in the Champagne region. The production of these exquisite Champagnes is limited to around 3,500 cases per year, with the Rosé variant comprising 15% of the total production. The Rosé Champagne exhibits a delicate raspberry hue and offers a fresh and elegant bouquet of raspberries, fresh rose petals, red currants, licorice, and sour cherries. It presents a rich and velvety mouthfeel.
