Bruno Clair firmly believes that great vineyard plots and old vines are the two most important factors in producing top-quality wines. Why does he have such a fondness for old vines? In his book "Terroir & The Winegrowers," he specifically mentions, "Is it the grapevine that understands the characteristics of each terroir condition better, or is it us, the grape growers? His answer is the grapevine! Because the interaction between the grapevine and the terroir conditions is constant and cumulative over time. Therefore, the older the vine, the more accumulated knowledge and interaction it has, naturally achieving a perfect harmony with the terroir conditions and yielding the best grapes."

As a result, he recommends that all Côte d'Or grape growers pay more attention to their old vines because they are the "living beings" that truly understand the characteristics of each terroir condition.
