Longting Winery is located in the Penglai region of Shandong Province. The winery was established in 2013 with the foundation of its vineyards and the construction of its winery the following year. After three years of cultivation, the winery had its first harvest in 2016. In 2019, Longting Winery officially opened and its wines were released to the market. Currently, the winery covers an area of 68 hectares, with 34 hectares dedicated to vineyards. The varieties grown in the vineyards include Petit Manseng, Cabernet Franc, Chardonnay, Marselan, and Vidal. The winery follows the core principles of "respecting nature, craftsmanship, enjoying life, and passing on beauty" and follows the "unity of heaven, earth, and man" philosophy. They actively practice biodynamic farming in order to create high-quality Chinese-style wines. One month before the grapes reach maturity, the winemaker evaluates their ripeness and the management team conducts at least two rounds of vine selection, removing any clusters that are not ripe enough, too small, or affected by pests. The selected fruits are then carefully hand-picked and undergo a third round of selection in the winery. The winery is equipped with advanced processing equipment and uses a gentle de-stemming process to ensure the grapes remain intact, followed by a gentle pressing in a nitrogen-protected press to preserve the aroma and clarity of the grapes. The winery's design follows the gravity-flow principle, allowing the wine to flow from one stage to the next without the use of pumps, which could potentially damage the quality of the wine. During fermentation and storage, the winery uses different-shaped and sized containers for red and white wines, all equipped with temperature control and nitrogen protection devices to ensure the wines are always in the best environment and condition. Longting Winery is known for its meticulous winemaking process and produces wines of exceptional quality.
