Pascal Marchand 是一位極具個人想法釀酒師，20出頭沒有任何背景，1983年一個人走到葡萄酒世界中最居挑戰性地區擔任採收工作，不停拜訪酒莊學藝短暫待過Domaine de la Vougeraie， 而第 一個酒莊係Pommard 區為人熟悉『Domaine Comte Armand』短短一年就靠自身實力掌握咗Dm.Comte Armand工藝更為酒莊推動Biodynamic，一切都是他堅信 Henri Jayer 釀酒哲學，當年1985年，23歲的他打了一通影響他一生的電話，電話另一頭是布根地酒神Henri Jayer！Pascal 想了解 Jayer 先生所發明的冷浸泡法 (Cold Soaking)，Jayer 先生大方地邀請他前來深談，將為什麼採用冷浸泡法的來龍去脈鉅細靡遺地分享給 Pascal精準控制品質同非常重視葡萄園健康， 2010年，Marchand Tawse 正式成立，釀酒風格與酒神『Henri Jayer』相似，出產葡萄以精緻花香為主軸，較傾向質量為主，慢慢Marchand Tawse 更成為左布根地新一代膜拜酒：當中有【Domaine Bizot】・【Domaine Arnaud Ente】同主角【Marchand Tawse】
