Tenmi Shuzo began brewing sake in 1998 under the guidance of Tochigi Toshio, who graduated from the Tokyo University of Agriculture with a degree in sake brewing. During her time at university, she was captivated by the charm of Japanese sake and decided to dedicate herself to the world of sake. She has been involved in sake brewing for over 20 years. She then joined the renowned brewery "Tukasa," where she gained experience in sake production and learned the importance of teamwork.

After acquiring knowledge and skills, she took on the role of Toji (master brewer) at Tenmi Choshu Shuzo, where she focused on creating sake with a well-balanced combination of sweetness and acidity. The sake produced by Tenmi Shuzo emphasizes the absence of flavors other than those found in Japanese sake. While wooden koji rooms are commonly used in sake production, Tenmi Shuzo employs stainless steel koji rooms instead of wooden ones. The water used in the process undergoes "super oxygen ionization," resulting in a clear and clean taste. As a result, Tenmi Shuzo has become one of the highly popular sake brands in Japan!
