Akkeshi is a whisky distillery located in the town of Akkeshi in Hokkaido, Japan. It is known for producing single malt whisky using traditional Scottish distillation methods.The Akkeshi distillery was established in 2016 and is one of the newer whisky distilleries in Japan. The founders were inspired by the Scottish whisky-making traditions and sought to create a similar style of whisky in Japan.The distillery's location in Akkeshi, with its cold climate and coastal influence, provides a unique environment for whisky maturation. The distillery takes advantage of long, cold winters and warm summers to allow the whisky to interact with the oak casks and develop its flavors over time.Akkeshi whisky is made using locally sourced barley and water from nearby natural springs. The whisky is distilled in copper pot stills and matured in a variety of cask types, including ex-bourbon, sherry, and Mizunara oak casks. This combination of ingredients and maturation techniques contributes to the flavor profile and character of Akkeshi whisky.As a relatively new distillery, Akkeshi is still in the process of aging and releasing its own whisky. It takes time for whisky to mature and develop the desired flavors, so the distillery has released limited editions and experimental releases to showcase their progress.
