The Chugoku Jozo distillery, located on the shores of Lake Biwa in Shiga Prefecture, is owned by Likaman, the parent company of Liquor Mountain, Japan's largest liquor store chain. Likaman is known for its business acumen and understands the principle of "strike while the iron is hot." To establish a presence in the booming Japanese whisky industry, they chose to build the distillery as quickly as possible.The production process for whisky, from saccharification to fermentation, is very similar to beer production. Taking advantage of this similarity, Likaman enlisted the help of their subsidiary brewery, Nagahama Roman, to handle these steps. As for the distillation equipment, Chugoku Jozo opted for Hoga Stills, a Portuguese company specializing in small-scale stills. Unlike renowned Scottish manufacturer Forsyths, Hoga Stills had a shorter waiting list and faster delivery times.
