Ayala

Ayala is a Champagne house with a history of 150 years, located in the Champagne region. The Ayala estate was founded by Edmond de Ayala in 1860. It was Edmond's younger brother, Fernand, who crafted the dry vintage Champagne that quickly brought fame to the winery. The Champagne gained particular recognition as the designated Champagne of the British and Spanish royal households. Although the production of Chardonnay in the Champagne region is relatively low, Ayala distinguishes itself by focusing on Chardonnay as its main grape variety. The wines have a delicate and elegant character, with a fresh and crisp style. All the wines are fermented in stainless steel tanks, which enhances their refreshing and mouthwatering qualities. Interestingly, the cellar master and the entire winemaking team at Ayala are women. Despite the winery being acquired by Bollinger, it has maintained its distinctive style without any changes.
