Didier Amiot started producing his own wines only in 2020. Previously, he worked alongside his brother, Jean-Louis Amiot, at Domaine Amiot et Fils. Their family has been involved in winemaking for several centuries, with their grandfather Pierre Amiot producing the first bottle of wine in 1976. The family estate has exceptional terroirs and is primarily located in Morey-Saint-Denis, Chambolle-Musigny, and Gevrey Chambertin.

After separating from his brother, Didier Amiot embarked on his own winemaking journey. Unlike many new wineries in Burgundy in recent years, Didier Amiot is already an experienced veteran. He had worked for over 30 years at Domaine Pierre Amiot, where he developed a solid foundation of winemaking skills. Pierre Millemann, the renowned chief winemaking consultant for Domaine de la Romanée-Conti and other prestigious estates like Domaine Dujac and Gaja, recognized Didier Amiot's talent and decided to join his team as the chief winemaking consultant.

Together, they aim to create top-quality wines. Pierre Millemann not only participates in the production of all the wines at the estate but also includes Didier Amiot's flagship wine, Clos de la Roche Grand Cru, in his own single-barrel project. The grapes used for this wine come from Didier Amiot's ancestral vineyards. Both Pierre Millemann and Didier Amiot work together on every step of the winemaking process, from harvesting and pressing to fermentation, blending, and aging. Only the labeling differs, with the same wine being sold under both the Didier Amiot label and the Pierre Millemann label.
