Domaine Lajibe, led by former Olympic fencer Jean-Baptiste Semmartin, has become the "unicorn" estate of Jurançon. After honing his craft under biodynamic legend Emmanuel Giboulot in Burgundy, Semmartin returned to his roots to produce some of the most precise white wines in South West France.

The estate is Demeter-certified biodynamic, focusing on high-altitude vineyards with steep slopes and pebble-rich soils. His winemaking philosophy is strictly low-intervention—using native yeasts, neutral oak, and minimal sulfur—resulting in wines that possess a "laser-like" acidity and profound crystalline purity.

The flagship Carmeret Jurançon Sec showcases a dense, clay-driven texture balanced by vibrant citrus and flinty minerality. Unlike traditional sweet Jurançon, Lajibe's dry wines are celebrated for their tension, energy, and remarkable aging potential. Today, these wines are highly coveted worldwide, often disappearing as soon as they are released.
