Domaine Michel Prunier et Fille is located in the Cote de Beaune region of Burgundy, in the village of Auxey-Duresses. The winery has a long history, with the Prunier family founding it in the 16th century. The current owners are Michel Prunier and his daughter Estelle Prunier. In 2004, Estelle took over the management of the winery from her father, who still oversees production. Estelle studied grape cultivation, winemaking, and international trade during her university years and worked as a winemaker in Bordeaux and Australia. After taking over as the winery's owner, she is mainly responsible for wine sales and managing the tasting room. The winery currently has 12 hectares of vineyards, spread across 6 villages including Meursault and Volnay. The main grape varieties grown are Pinot Noir, Chardonnay, and a small amount of Aligote. The family believes that a good wine must truly reflect the terroir and characteristics of the vintage. They also plow some of their vineyards to improve air circulation and drainage, plant grass in some areas to stimulate vine growth, and do necessary weeding on sloped land to ensure the vines can fully absorb sunlight and heat. For premier and village level vineyards, the grapes are handpicked, while the rest are machine-harvested at the ideal ripeness. The red grapes are destemmed and fermented in temperature-controlled tanks for 10-13 days. For white wines, the grapes are pressed using pneumatic presses. After a brief settling, the juice is fermented in stainless steel tanks, with the temperature kept at 18-20℃ to preserve the fruity aromas and increase the complexity of the wine. Except for Aligote and regional level Chardonnay, the fermented wines are gravity-fed into 0-15% new French oak barrels for aging.
