When it comes to the pioneer of biodynamic practices in the Champagne region, one cannot overlook Ms. Françoise Bedel. Champagne making has been a family tradition passed down through three generations in the region. However, due to a serious illness that befell her son, Ms. Françoise Bedel decided to change the winery's style. After exploring natural remedies, she aimed to incorporate this concept into her own Champagne production, thus immersing herself in the world of biodynamic practices.

The primary goal of the winery is to maintain the soil quality. They only use fertilizers made from animals, plants, and minerals. Françoise firmly believes that by preserving the activity of organic organisms in the soil, healthy vines and fruits can be achieved. The grapes in the vineyard are handpicked, and they are carefully vinified separately according to different plots and grape varieties. Each barrel is aged for at least 36 months without adding any sugar to extract the most authentic essence of the grapes.

Just as a composer meticulously selects different instruments to compose a grand symphony, Ms. Françoise Bedel, like a sensitive perfumer, navigates through various combinations of aromas to find the optimal balance of flavors. This approach successfully reinterprets the terroir conditions of the Champagne region.
