La Chaume des Lies is a winery founded by the couple Lothar Galloo and Margaux Rivaux. They first met in 2018 while working at Maison En Belles Lies under Pierre Fenals. Both of them shared a deep love for the Burgundy region and were determined to pursue their dream of creating their own winery. Finding suitable land in Burgundy was no easy task, but through their joint efforts, they managed to acquire a spacious underground cellar in Saint-Romain at an affordable price, providing an ideal environment to embark on their winemaking journey.

Their dream began with a 2.5-hectare vineyard in Burgundy, encompassing Saint-Aubin, Auxey-Duresses, Bouzeron, Hautes-Côtes de Beaune, and even a 2-hectare Beaujolais vineyard. Margaux brings extensive experience in cultivation, particularly in biodynamics, having studied planting techniques in various wine regions of France. They reject the use of herbicides, pesticides, or any synthetic chemicals. All their winemaking processes follow the Lunar calendar, and their wines are unclarified, unfiltered, with only minimal additions of sulfites before bottling. Despite being a young winery, their dedication has yielded exceptional results. Just like the couple themselves, who exude vibrant energy while maintaining a calm and steady demeanor, this dynamic chemistry is beautifully reflected in their wines. The support and recognition from wine enthusiasts are crucial for this promising new winery to thrive and succeed.
