Pehu Simonet

Pehu Simonet, which has been through four generations, is now managed by David Pehu. David initially studied wine in Burgundy but returned to the Champagne region in 1995 to take over the estate. Upon returning, he implemented several significant reforms: using only Grand Cru grapes, exclusively utilizing Pinot Noir or Chardonnay, fermenting in a large number of oak barrels, using only Burgundy oak barrels, and abstaining from malolactic fermentation. As a result, the winery produces no more than 20,000 bottles per year.

Speaking of the vineyards, they cover approximately 7.5 hectares, with 6 hectares classified as "Grand Cru." The remaining non-Grand Cru grapes are all sold to renowned wineries without exception.
