The founder of the estate was William Ponsot. After William's father fought in the Franco-Prussian War, he purchased vineyards in the village of Morey-Saint-Denis in 1872 for William to manage. Initially, the vineyards primarily supplied grapes and wine to the family's restaurants in northern Italy and for personal consumption. William passed away in 1926, and since he had no children, his nephew Hippolyte Ponsot took over. During his management, the estate gradually became one of the promoters of the AOC (Appellation d'Origine Contrôlée) system. In 1934, the estate began bottling its own wines, and in 1957, William's son Jean-Marie took over the reins. Jean-Marie was a pioneer in clonal selection through asexual reproduction and implemented a revenue-sharing system for vineyard planting in their own plots in 1961, using the mother plant from the 1954 Clos de la Roche. In 1972, Jean-Marie's wife, Jacquelyn Ponsot, inherited the Gevrey vineyards. In 1981, Laurent Ponsot, a legendary figure, joined the estate and took full control in 1983. However, in 2017, Laurent decided to leave the estate and establish his own wine brand, "Laurent Ponsot."
The estate covers an area of approximately 11 hectares. Domaine Ponsot has a limited production, with most of its vineyards located in grand cru and premier cru sites such as Clos de la Roche, Clos de Vougeot, Chapelle-Chambertin, Giotte-Chambertin, Le Chambertin, Clos St-Denis, and Corton. The primary grape variety is Pinot Noir, but there are also plantings of Chardonnay and Aligoté. The vineyards are managed using a combination of organic farming, sustainable cultivation practices, and biodynamic principles. Intervention is minimal, with assistance provided only when the grapes truly require it. Harvesting is done by hand, with careful selection during picking to prevent skin breakage. Further selection takes place upon arrival at the winery, and destemming depends on the conditions of the vintage. The wines are aged in old oak barrels and protected from air using a combination of carbon dioxide and nitrogen or an inert gas mixture. The wines are bottled without fining or filtration, and special technology corks are used to prevent air from entering the bottles. The wines have excellent aging potential, with older vintages showcasing remarkable complexity that collectors appreciate, aided by their limited production.
