Santa Sofia was founded in 1811 and is located in San Pietro in Cariano in the Veneto region. For two centuries, both the headquarters and the winery have been situated inside Villa Santa Sofia, a villa with a remarkable background. Built in 1565 by the influential architect Andrea Palladio, the villa is considered a masterpiece in the world of architecture and was listed as a UNESCO World Heritage Site in 1996. It has become a prominent symbol of the winery, surrounded by picturesque landscapes of green hills and waters.

The winery has always been dedicated to producing Amarone. In 1967, the winery attracted wine expert Giancarlo Begnoni to join and manage the estate. He innovated production techniques by combining traditional methods with modern technology. The favorable geographical conditions, with vineyards sloping southwards, have expanded the range of products and improved their quality. The winery primarily uses local grape varieties such as Corvina, Rondinella, Molinara, and Moscato for winemaking. Notable wines from Santa Sofia, like Recioto and Amarone, require the grapes to be dried for about 120 days, reducing their moisture content by approximately 30%. The dried grapes are then pressed and undergo further fermentation at low temperatures before maturing in oak or stainless steel tanks. It is worth mentioning that the winery still utilizes 14th and 17th-century cellars for aging their wines, showcasing exceptional aging capabilities.
