Domaine Taupenot-Merme is located in Morey-Saint-Denis and was founded in 1963 by Denise Merme and Jean Taupenot. In 1998, their son Romain joined the estate and now manages it together with his sister Virginie. They are the seventh generation of the renowned Taupenot family in the village. Domaine Taupenot-Merme and Domaine Perrot-Minot were divided from the Merme family, with half belonging to Denise Taupenot and her children, and the other half to Henri Perrot-Minot and his son. As a result, the vineyard management methods of the two estates are quite similar. The vineyards have been practicing organic farming since 2001, although they are not certified.

Currently, the estate owns 13 hectares of vineyards, including the Grand Cru vineyards Charmes-Chambertin and Mazoyères-Chambertin, as well as the Premier Cru vineyard La Riotte in Morey-Saint-Denis. Additionally, the estate owns a small plot in Clos des Lambrays, approximately 0.043 hectares, which yields only 1-2 barrels (about 400 bottles) per year, preventing Domaine des Lambrays from being classified as a "monopole."

The wines are made from 100% destemmed grapes, manually harvested and rigorously selected. The estate focuses on producing limited quantities of high-quality wines. The fermentation process includes a cold maceration before fermentation and an extended maceration of one and a half to two weeks to control the tannins and prevent excessive extraction. The wines are aged in oak barrels for 12 to 14 months, with a proportion of 30% new barrels for village-level wines, 40% for Premier Cru, and 50% for Grand Cru. Domaine Taupenot-Merme is considered a rising star in Burgundy, with its relatively high proportion of new barrels contributing to its distinct character.
