Thibaud Capellaro is rapidly becoming one of the most exciting rising stars in the Northern Rhône’s natural wine scene. Despite not coming from a winemaking family, Capellaro followed his passion after a business career, honing his craft at prestigious estates like Domaine André Perret and Joblot, and even gaining international experience in Australia.

In 2018, he established his own cellar in Condrieu, focusing on high-altitude and "cool-side" vineyards in Côte-Rôtie and Saint-Joseph. These sites, once overlooked, now provide the essential freshness and acidity needed in the face of climate change. His approach is defined by low-intervention philosophy: organic farming, indigenous yeast fermentation, and the use of diverse vessels such as amphorae, concrete eggs, and old oak barrels to preserve the purity of the fruit.

Capellaro operates two distinct labels. His Domaine wines come from his 2 hectares of estate vineyards, showcasing the profound depth of Côte-Rôtie schist. Meanwhile, his innovative SLOPE project (négociant) allows him to collaborate with organic growers in Ardèche and the Rhône, creating experimental, high-vibrancy wines like "Terra" and the unique white-red co-ferment "La Canuse".
