The winery, established in 1999 by Celestino Gaspari, is translated as "yeast" in Greek and "Chamay Winery" in Chinese. As both the owner and winemaker, Gaspari was familiar with grape growing from a young age. After founding his winery, he joined the renowned Amarone producer "Bertain" to learn winemaking for three years. He also had the opportunity to work with the "father of Amarone, Giuseppe Quintarelli," who is often referred to as the "Chateau Margaux of Italy." He even married Quintarelli's daughter, making him his father-in-law and learning winemaking from him for 12 years. With great ambition, he decided to embark on his own winemaking journey and established "Zyme." During his journey, he also met "New York wine merchant Robert Chadderton and Amarone master winemaker Romano Dal Forno." These encounters have made him one of the most promising new stars in Veneto, with an annual production of only 80,000 bottles that are highly sought after by wine enthusiasts.
