飛鸞

Hiran (飛鸞) comes from Mori Shuzojo, a sake brewery established in 1895 and located in Hirado City, Nagasaki Prefecture. Hirado is the westernmost city on Japan's main islands and has historically served as an important international port. From the sea, Hirado Island resembles the shape of a mythical "phoenix" or "ran" (鸞), giving it the name "Hiran Island (Hirado)."

Mori Shuzojo crafts all its sake using the ancient Kimoto brewing method, a traditional fermentation process that enhances the depth and complexity of the sake. Every bottle they produce is a seasonal limited edition, emphasizing the theme of working in harmony with the natural environment. The brewery exclusively uses pesticide-free cultivated sake rice as its raw material. Moreover, the sake is left unadjusted and unrefined after brewing, preserving the unique and original flavors of the sake.

Mori Shuzojo is highly regarded in Japan, with its sake garnering significant attention from sake enthusiasts and connoisseurs. Due to its small annual production, its limited-edition releases often sell out immediately upon release. Hiran is also ranked as the second most popular sake in Nagasaki Prefecture on SAKETIME, making it a must-try for sake lovers seeking a taste of authentic and artisanal Japanese sake.
