00 Wines is a modern, up-and-coming winery in the Willamette Valley of Oregon, USA. It was founded by Kathryn and Chris Hermann. The winery's inaugural vintage was in 2015, and it follows traditional Burgundian techniques with extremely low yields. They have a Grand Cru winemaking project in the Champagne and Burgundy regions. Many top winemakers in Burgundy believe that the Willamette Valley is an excellent location in the United States for growing Pinot Noir and Chardonnay. Dominique Lafon has even stated that it is a New World wine region capable of producing the finest white wines.

Chris has had a lifelong passion for wine and has worked as a wine brand consultant for a considerable period. He has dedicated himself to studying the terroir of the Willamette Valley and has tasted top white wines from around the world. With the vision of creating the ultimate Chardonnay, he chose the name "00," representing the infinite potential of life. Their dream is not just to produce the finest Chardonnay in Oregon but also to offer wines that can rival top Burgundy estates like Coche-Dury and Roulot. Chris was introduced to a winemaking technique called "Black Chardonnay" by a consultant from Domaine de la Romanée-Conti (DRC), which significantly reduces the risk of premature oxidation (premox). Coche-Dury also employs the same method. Charles Curtis MW mentioned in Decanter that the wines from 00 Wines can compete with Coche-Dury.
