Champagne Chavost

Chavost is located in Chavot-Courcourt, within the Coteaux Sud d'Epernay region of Champagne. This region is very unique as it is a grower champagne cooperative. In Chinese, cooperative is often referred to as a "合作社," where several growers come together. These cooperatives are quite common and exist in most production areas. Chavost operates through this cooperative model, partnering with several farmers. Recently, the cooperative made a significant change by convincing some farmers to transition their vineyards to organic cultivation. It's important to note that organic farming in the Champagne region is quite challenging.

The winery is now under the leadership of Fabien Daviaux, who has taken over the estate. They have converted the entire 5-hectare vineyard to organic farming. The goal is to create an organic champagne brand that is produced in the most natural way possible, with no additives. During the bottling process, they do not add sulfur or clarify the wine, resulting in a highly pure, deep, fresh, and extremely drinkable champagne.
