The estate, belonging to Count and Countess "Aymard-Claude de Nicolay," was established in 1834. Countess "Chandon de Briailles" was a prominent member of the renowned Champagne family "Moët & Chandon," adding to the estate's prestige. Currently, the winery owns 13 hectares of vineyards primarily located in renowned areas such as Aloxe-Corton, Corton, Savigny, and Pernand-Vergelesses. François de Nicolay serves as the winemaker, with assistance from his sister, Claude.Since 2005, the estate has adopted biodynamic farming practices and winemaking techniques. This approach infuses the wines with freshness and aromatic qualities, elevating their complexity and aging potential. The use of new oak barrels is minimal, aiming to create wines that are refined, elegant, pure, and transparent, while also showcasing the terroir. The wines often exhibit rich berry aromas, cherries, rose petals, complemented by fresh soil notes, hints of mint, roasted meat, and spices. With silky and delicate tannins, they perfectly express the charm of the terroir.
