Chavost

Chavost, located in Chavot-Courcourt within the Coteaux Sud d’Epernay region of Champagne, is a unique grower champagne cooperative. In Chinese, cooperatives are often referred to as 合作社 (hézuòshè), which consist of several growers cultivating grapes. These cooperatives are quite common in the region, with Chavost operating through collaboration with local farmers. The cooperative has made significant changes by persuading farmers to switch to organic vineyard practices. It is important to note that organic grape cultivation in the Champagne region can be quite challenging.

Under the leadership of Fabien Daviaux, who has taken over the estate, the cooperative has transitioned its 5 hectares of vineyards to organic farming. They have focused on creating an organic grape and producing Champagne in the most natural way possible, without any additives. The wines are bottled without added sulfur and without clarification, resulting in highly pure, deep, fresh, and easily drinkable Champagne. This approach emphasizes purity and a commitment to crafting Champagne in a way that respects both the environment and the quality of the final product.
