The 2016 Blanc de Blancs Vintage leads with lemon pith, wafer biscuit and crushed oyster shell, with an intense saline core, wrapped in layers of nori, kelp, field mushroom and even iodine. It's savory and dry in the same way that turmeric is. The mousse in the mouth is plump and cushioning, and in the context of the fruit, it works nicely. This is chalky, fine and almost steely, were it not defined by its texture, which is airy and well rounded. This spent seven years (or 84 months) on the lees prior to release. 13% alcohol.
