Yuandian’s 2019 The Starting Point Cabernet Sauvignon has a deep purple appearance and is made in a similar way to the 2019 The Starting Point Cabernet Franc (no use of sulfur dioxide). On the nose, there is some savory, leafy Cabernet fruit showing cassis, mulberry, bramble and black cherry with some perfumed, herbaceous notes and a hint of new oak (clove, toast and smoke). On the palate, the 2019 The Starting Point Cabernet Sauvignon is full-bodied with coating, fine-grained tannins, some lifting acidity and fairly well-integrated 15% alcohol that provide the bones for a reasonably concentrated core of dark leafy Cabernet fruit. With its moderate to longer length, the 2019 Cabernet Sauvignon is a step up in quality from the 2019 Cabernet Franc. It is approachable now but will improve in bottle over the next 3-5 years. 1,263 bottles produced.
