Timothée is passionate about wine and entered a winemaking school in Burgundy at the age of 17. After graduating, he embarked on a journey to find his own vineyard. It was during this time that his uncle, due to health reasons, decided to give up cultivating the land left by their grandfather. As a result, Timothée made the decision to return to his hometown and embark on the path of becoming a renowned natural Champagne producer.

Starting in 2004, Timothée completely abandoned the use of herbicides. In 2008, he transitioned to organic farming, and in 2014, he obtained organic certification. The winery only owns 3.5 hectares of land, all located in the premier cru village of Villers-Alleran. They are only able to produce 8,000 to 12,000 bottles per year.

The Champagne is fermented solely using indigenous yeast and undergoes no clarification, filtration, or sugar dosage.
