容量: 750ml Philip Pacalet 在2001 年成立了自己的酒廠並使用了自己的名字。年輕的他走遍了法國學習釀酒這門學問。在一開初，他先到了隆河區 (Rhone)中一間很知名的酒莊『Chateau Rayas』學習，這是一家在隆河區很頂尖的葡萄酒酒莊，隨後更回到布根地跟著傳說級釀酒師『Leroy』和『Domaine Prieure Roch』學滿了師，更被『Domaine de la Romanee Conti』邀請接任釀酒師一職，但他很有個性，想創造屬於自己的一番事業，掌握在自己手中。 Philippe Pacalet 他是一位崇尚自然種植，不用任何農藥，不去梗，使用天然酵母，他相信這樣能夠更可以將葡萄的本質自然地展現出來，成為了自然派酒系愛好者的心頭好之一，野心勃勃的推出法國布根地不同地酒款，由「北至南」已經出現足跡

Burghound 92

Aux Chaignots is on the Vosne side of the village and the elegance is in full evidence here. Whole clusters are fermented on ambient yeasts in wooden vats, before ageing over two winters in used oak. The fruit shines through, yet there is a restrained elegance here; it is ‘less forward without being strict’, according to Pacalet. The freshness that comes from being at the end of the combe brings a delicious balance to the wine.
